Biryani is a very popular dish in all parts of India. Biryani is a spicy rice mixed with meat (Chicken, Mutton, Beef, Prawn and Shrimp) and Vegetables. The main ingredients are rice, spice, dahi, meat, chicken and vegetables. Everyone loves to eat Biryani, whether it is a chicken biryani, beef biryani, vegetable biryani, Shrimp biryani, Prawn Biryani or mutton biryani. I would love to post this simple and an easy Shrimp Biryani recipe. Here, I'm going to show you how to make a Shrimp Biryani step by step......

For Shrimp:
1 kg shrimps
2-3 tbsp ginger and garlic paste
2 medium size tomatoes (puree)
1 tbsp red chilli powder (as per taste)
2 medium size onions, thinly sliced
1/2 tsp turmeric powder
1 lemon juice
salt as per taste
2 bay leaves
2 small cinnamon sticks
3 cloves
3 green cardamoms
6-8 black peppercorns
1 black cardamom
1 tsp cumin seeds
75 ml oil
5-6 green chillies whole (remove the stems)
1 star anise
25-30 grams Shan Biryani Masala
2 tbsp rose water to sprinkle
a pinch of orange food colour mix with 2 tbsp of water
2 tbsp ghee
1/2 cup of water
For Boiling Rice:
750 grams brown rice
water for boiling the rice
salt as per taste
2 bay leaves
2-3 small cinnamon sticks
2 cloves
2 green cardamoms
5-6 black peppercorns
1 black cardamoms
1 star anise
25 gm almonds
25 gm raisinsInstructions for cooking:
1) Wash and soak brown rice for 2 hours or more. As shown in the picture. 2) Clean, shelled, deveined and wash the shrimp properly and pour lemon juice. Leave for 10 minutes, then wash them again and set aside. As shown in the picture.
3) Heat oil in a kadhai/pot vessel and fry cleaned shrimp for 5 minutes. Then remove them from oil and set aside. As shown in the picture.4) Now take another kadhai/pot vessel, heat oil and then add bay leaves, cinnamon sticks, green cardamoms, black peppercorns, star anise, cloves, black cardamoms and cumin seeds cook till they crackle.
5) Now add onion and saute till they turn golden brown, then add ginger garlic paste, tomato puree, salt, red chilli powder, turmeric powder, Shan Biryani Masala and water, mix them well. Cook for 5 minutes.
6) Then add fried shrimp and green chillies and cook for another 5 minutes. As shown in the picture.7) Take an empty vessel, add water as required for boiling rice, add salt, bay leaves, cinnamon sticks, cloves and green cardamoms, black peppercorns and black cardamom bring the water to a boil.
8) Add soaked rice into the boiling water and cook further for 20-25 minutes or till rice is cooked about 85-90%. Now, drain the excess water and set aside. As shown in the picture.9) Take an empty vessel, now place 1/3 of rice to it and spread it evenly, then add 1/3 shrimp gravy. Repeat this process for the rest of the shrimp and rice.
10) Add food colour at the top of the layer. And sprinkle some rose water.
11) Cover the lid of the vessel and cook the Shrimp Biryani for 10-15 minutes on very low flame.
12) Take a pan, heat ghee and add raisins and almonds and fry till turns golden brown. Pour these fried dry fruits on top of the Shrimp Biryani. As shown in the picture.13) Yours Shrimp Biryani is almost done. Serve hot with Rita or chutney. As shown in the picture.
