Ragi Barfi/Finger Millet Flour Fudge

Ragi Barfi or Finger Millet Flour Fudge is one of the delicious Indian sweets that is fit for every festive season. Ragi or Finger Millet is indeed a superfood. Ragi or Finger Millet is a wonder grain for those people who want to weight loss. It is rich in calcium, protein and high in fiber. Ragi or Finger Millet helps in controlling Diabetes. Ragi or Finger Millet is gluten-free, cholesterol free and full of essential nutrients including iron, calcium, proteins, dietary fiber, potassium and vitamin B3, vitamin C and vitamin E. 
Ragi or Finger Millet is widely consumed in South India. Ragi or Finger Millet flour is very healthy and good for brain development and used to make various food recipes such as Idli, Dosa, Roti, Paratha, Puri and Halwa etc. Ragi or Finger Millet is one of my favourite cereals. In this recipe I'm going to show you how to cook Ragi Barfi/Finger Millet Flour Fudge. The main ingredients are Ragi or Finger Millet flour, Ghee, Sugar, Milk and Dry fruits. You can eat this Ragi Barfi/Finger Millet Flour Fudge with your evening tea as a dessert. Do try this healthy and delicious recipe once you will surely love this.

Ingredients: 
1 1/2 cups Ragi or Finger Millet
1 1/2 cups milk
1 1/2 cup sugar
1/2 tsp green cardamom powder
1/2 cup water if required
1/2 cup ghee 
10 almonds (finely sliced)
10 pistachios (finely sliced)
5 walnuts (finely chopped)



Method:
1) Take a pan, heat ghee and add Ragi/Finger Millet. Roast on low flame for about 5-10 mins, till they turn aromatic and dark gray in colour. Make sure that there is no raw smell in Ragi flour/Finger Millet flour. As shown in the picture.

2) Add chopped dry fruits and cook for 2 minutes, then add sugar and mix it well and cook for 5 minutes, then add milk slowly, mix well again add water if required. As shown in the picture.

3) Cook for 5-10 more minutes. Keep stirring continuously and cook till whole mixture becomes a mass and leaves the side of the pan. As shown in the picture.
4) It will be like a dough, cook till ghee separates.
5) Now, grease an aluminium tin and set aside. As shown in the picture.
6) Pour this mixture in the greased pan and spread it evenly and sprinkle some sliced dry fruits on top and press them using a spatula. L
et it cool down for 4-6 hours, or keep it in the fridge for 20 minutes. As shown in the picture. 


7) Let it set properly before cutting them into pieces. Now, cut into 15-18 equal pieces using a sharp knife. As shown in the picture.

8) Yours Ragi Barfi/Finger Millet Flour Fudge is ready to serve. As shown in the picture.
9) Store it an air-tight container and can be eaten up to a week.
