Apple Jalebi (Apple Fritters) Festive Recipe

Let's start this New Year 2021, with some sweet recipes. As we all know, winter is started and during winter we eat almost twice the amount of food than we normally eat in the rest of the month. As the temperature drops, we crave more comfort food in winter. However, comfort food are not always a healthy option because they are high in sugar, fat and refined carbs. 

So, today I'm going to share my first recipe of 2021 that's called Apple Jalebi (Apple Fritters), which is yummylicious and scrumptious. Jalebi is one of the popular and traditional sweet snack recipes all over North, South or Western Asia. Here, I have given a twist to regular Jalebi and made Apple Jalebi (Apple Fritters). I prepared this dessert using Nova Shudh Ghee which is rich and creamy. This dessert is best to be eaten with curd or rabri. The main ingredients of this recipe are all-purpose flour, sugar, apple and ghee. I love fruits and apple is my all time favorite, even if you don't love apple you will fall in love with this recipe Apple Jalebi (Apple Fritters). Ingredients:

For Batter: 

1 cup all purpose flour
2 apple
1/2 tsp active dry yeast powder
a pinch of salt
2 tsp corn flour 
1 tbsp Nova Shudh Ghee
water as required
1 tsp sugar
Nova Shudh Ghee (for frying)
2 Almonds (for garnishing)

For Syrup:
1 cup water
1 cup sugar
1/2 tsp lemon juice
1 tbsp kewra water (Scented water)


Steps of cooking:

1) Take an empty bowl, then add all-purpose flour, salt and corn flour. Mix this dry mixture well.

2) Take an another bowl, dissolve sugar and yeast in lukewarm water. Let it settle for 10 minutes. As shown in the picture. 



3) Now add the yeast solution to it and add 1 tbsp Nova Shudh Ghee and add water if required, mix them well for about 5 minutes with hand beater. Make sure there are no lumps in the batter. As shown in the picture.

4) Cover it with cling drape and let it rise for an hr. 

5) After an hour, you will see some bubbles in the batter. It means, it has risen. Mix the batter well to get a smooth paste. As shown in the picture.
6) Take a pot vessel, add sugar and water, then cook for about 5-8 minutes or till sugar dissolves and the syrup thickens slightly or one string consistency is formed and add lemon juice and kewra water to it. Turn off the flame. And set aside.

7) Wash the apple and cut it into thin slices. Remove the seeds and discard it. As shown in the picture.
8) Take a pot/kadai, heat Nova Shudh Ghee, now dip apple rings one by one in the batter and coat it evenly everywhere. As shown in the picture.
9) Carefully drop the batter coated apple ring one by one in the ghee, pour the hot ghee on the apple rings, you will see the apple ring puffing up. 

10) When done on one side, flip it to the other side and allow to cook until it gets a little crispy and golden color.

11) Now soak these apple rings one by one in warm sugar syrup, flip the jalebi in the syrup to coat well. Allow it to soak for just 1 minutes in the sugar syrup. 

12) Remove them from the sugar syrup and Garnish with slivered almonds. Sever it immediately. As shown in the picture.



Note:

1) The apple slice should not be too thin.
2) The batter should not be too runny. It should be thick enough to coat apple ring evenly everywhere.
3) Do not soak apple rings into the sugar syrup for too long, otherwise it will turn soggy. Just dip it for a minute.
4) Always soak apple rings in the sugar syrup as or when required. And once done serve it immediately.
