Koozi (Meat+Rice+Noodle+Egg)...Arabian Dish

Koozi is one of the delicious, awesome and special recipe of Saudi Arabia. Let me tell you about what is so special about this recipe. Koozi (Arabian Dish) contains a lot of ingredients and among them the main ingredients are Beef/Lamb/Chicken Meat, Eggs, Noodle, Rice and Spices. The Koozi can be eaten as a main meal during Lunch or Dinner. In this recipe, I'm going to show you how to make Koozi with Meat, step by step.....

Ingredients: 

1 1/2 Kg Beef/Lamb/Chicken Meat (cut into 4-6 large pieces)
100 ml oil + 2 tbsp for spaghetti
salt as per taste
1 tbsp black pepper powder
4 tbsp Shan Kabsa Masala (optional)
200 ml tomato puree
2 tbsp turmeric powder
2 medium size onions, thinly slice
2 dried black lime
2 bay leaves
2 cinnamon sticks
4 green cardamoms
4 cloves
6 black peppercorns
2 brown cardamoms
4-6 whole green chilies (remove the stem)
1 liter water
750 gm brown rice
250 gm Spaghetti
4 eggs

Methods for cooking:

1. Wash and soak brown rice for at least 2 hours.

2. Take a large pressure cooker, heat oil, add bay leaves, cinnamon sticks, black peppercorns, green cardamoms, brown cardamoms and cloves saute for 30 seconds, then add sliced onions and saute for 5-10 minutes or till they turn golden brown, add meat pieces and cook for 10 minutes or till they turn brown or changed its color, turning occasionally add tomato puree, salt, black pepper powder, turmeric powder and Shan Kabsa Masala. Mix them well and cook for 5 minutes and add water and bring it to a boil.

3. Cover the lid of the pressure cooker and cook for 25-30 minutes on low flame or until meat tendered completely. Open the lid of the pressure cooker and remove the meat pieces from the broth and set aside.

4. Now measure the broth, it should be 750 ml, if it is less than that add a little more water. Then add rice, salt, green chilies and dried black lime into the broth. Bring it to a boil.

5. Cover the lid of the pressure cooker and cook for 5-8 minutes on low flame. Now open the lid of the pressure cooker, if there is excess moisture, then evaporates, it and simmer for another 5 minutes on very low flame. And set aside.

6. Take an empty pot vessel, add water, oil and salt, bring it to a boil, then add Spaghetti and cook for 20-30 minutes or until completely done. Drain the excess water and set aside.

7. Take an empty pot vessel and boil the eggs into the water for 15 minutes. Remove shell from boiled egg and set side.

8. Heat a skillet, grease it with some oil now adds those meat pieces which had taken out of the broth previously. Place them one by one in the skillet and cook for 10-15 minutes on medium flame, turning occasionally, when they turn brown remove them from the skillet and set aside.

9. Now assemble all of them into a large serving tray/dish. As shown in the picture. And decorates it with some cucumbers and tomato slices.


10. Yours Coozi (Meat+Rice+Noodle+Egg) is ready to serve.

Shahi Paneer (Cottage Cheese)....Healthy Recipe

Shahi Paneer is originating from the Indian subcontinent. Shahi Paneer is a thick gravy and it is a very popular dish. Shahi Paneer is often eaten at parties, marriage ceremonies, special occasions or functions. The main ingredients of Shahi Panner are cream, yogurt, milk, paneer and spices. Paneer is also known as Cottage Cheese. Paneer (cottage cheese) is rich in protein, helps to improve digestion system, maintains sugar level and helps to lose weight. Indians love Paneer (Cottage Cheese) and Paneer is called the king of all vegetables. Paneer can be made in many different ways, such as Khadai Paneer, Paneer do Payaza, Paneer Biryani, Paneer mushroom, Paneer Pulao, Paneer matar curry and Paneer tikka etc. Today, in this recipe I'm going to show you how to make a healthy and delicious Shahi Paneer, for your lunch and dinner.

Ingredients:



250 gm Paneer (Cottage Cheese) cut into cubes

125 ml yogurt


125 ml milk


125 ml fresh cream

salt as per taste

1-2 tbsp red chili powder

1 tbsp turmeric powder

2 tbsp coriander powder

1 tbsp garam masala

1 tsp cumin powder

10-12 cashew nuts

70-100 ml oil

4 tbsp Kasuri meethi

water if required

2 tomatoes, finely chopped

1 medium size onion, roughly chopped

4-6 garlic cloves

2 inch ginger

2 bay leaves

2 cinnamon sticks

4-6 black peppercorns

4 green cardamoms

4 cloves

2 brown cardamoms



Methods of cooking:



1. Take a Khadai or pot vessel, heat oil, add onion and saute for 2 minutes or till it becomes soft, then add ginger and garlic pieces, saute for a minute, now add tomato and sprinkle some salt over it and cook for 5 minutes, salt helps to cook the tomatoes easily. Turn off the flame, let it cool down. As shown in the picture.





2. In the meanwhile, cut the Paneer into cubes, as shown in the picture.





3. Now your mixture has cooled down. Take a grinder/mixer and grind this mixture to make it a fine paste. Set aside.


4. Take a large Khadai/pot vessel, heat oil, add bay leaves, cinnamon sticks, black peppercorns, green cardamoms, cloves, brown cardamoms saute for 30 seconds, then add this paste into the oil, add salt, red chili powder, cumin powder, black pepper powder, coriander powder, turmeric powder and garam masala, cook for 10-15 minutes or until the oil separates from the gravy.





5. Now add beaten yogurt to the gravy and cook for 5-10 minutes or until the oil separates from the gravy.



6. Take a grinder/mixer and grind cashew nuts along with milk to make a smooth paste. Now add this mixture into the gravy and keep stirring until the oil separates from the gravy.



7. Now add fresh cream, and cook for another 2 minutes, yours gravy is ready, as shown in the picture.






8. Now add Kasuri Meethi and Paneer (cottage cheese) and mix them well and cook for 2-3 minutes, as shown in the picture. Add water if required.





9. Yours yummy and delicious Shahi Paneer is ready to be served. Eat with your favorite Naan, Romali Roti or Rice.

Fried Fish + Fried Rice.....Without Fried Chutney

Fish is a low-fat, high quality of proteins food, rich in calcium, magnesium, phosphorus, zinc, iron and potassium. Fish has got many essential nutrients, such as omega-3 fatty acids, vitamins A, D and E. Fried Fish is very popularly known and eaten all over the world. However, Fried Fish has been prepared by frying, covered with batter like, egg and flour (all purpose flour/gram flour). But in this recipe, I used only dry ingredients such as salt, chili powder, black pepper powder, cumin powder, turmeric, Fish Masala and garam masala powder. I've not used ginger, garlic and onion paste or any other batter. Ingredients:

For Fish:

750 gm Fish (cut into small pieces)
salt as per taste
1 tbsp cumin powder
1 tsp turmeric powder
2-3 tbsp red chili powder
1 tbsp coriander powder
1/2 tsp black pepper powder
1 tsp garam masala powder
1 lemon juice
4 tbsp Shan/National Fish Masala powder
oil for frying


For Rice:

500 gm brown rice
500 ml water
salt as per taste
2 onions, thinly sliced
4-6 green chilies (remove stem)
2 bay leaves
4 cardamom pods
4 cloves
2 cinnamon sticks
6-8 black peppercorns
2 brown cardamoms
1/4 tsp mace powder
4 tbsp ghee/oil
1 tbsp cumin seeds
2 tbsp Kewra water
a pinch of saffron color, mix with 1 tbsp of milk


For Chutney:

2 tomatoes
4 green chilies
1 cup coriander leaves, finely chopped
salt as per taste


Methods of cooking:


1. Wash rice and soak them in water for at least 2 hrs

2. Wash and clean Fish add lemon juice, set aside, for 10 minutes.

3. Take a blender, add tomato, green chili and salt, blend it to make a coarse paste. Now remove this paste to a serving bowl, add coriander leaves. Yours
Spicy Chutney is ready to be served.

4. Take a large bowl, then add salt, turmeric, red chili powder, cumin powder, black pepper powder, coriander powder, garam masala powder, Shan/National Fish Masala mix them well and set aside for 10-15 minutes. As shown in the picture.




5. Take a pressure cooker, heat ghee/oil, add bay leaves, cinnamon sticks, black peppercorns, green cardamoms, cloves, brown cardamom and cumin seeds, when spluttered, add onion and saute for 2 minutes, then add water, salt, mace powder, green chilies and rice, bring to a boil. Close the lid of the pressure cooker and cook for 5-10 minutes on low flame. Now open the lid of the pressure cooker, add food color and let it simmer for 5 more minutes on low flame. Add kewra water. Yours Fried rice is ready to be served.

6. Take a large non-stick fry pan, heat oil, when oil is enough hot, add a small batch of fishes in the frying pan and fry them for about 5-10 minutes on medium flame or until they turn golden brown,  turning occasionally. Now with the help of slotted spoon, remove the fishes from the oil to an absorbent paper. Repeat this process for the rest of the fishes.

7. Now, take a serving dish and assemble them as shown in the picture.




8. Yours

Khubani Ka Meetha...خوبانی کا میٹھا Hyderabadi dessert

Khubani Ka Meetha خوبانی کا میٹھا is an Indian sweet originating from HyderabadKhubani Ka Meetha is a very popular Hyderabadi dessert made from dried apricots, which can be eaten as a main cuisine at Hyderabadi weddings. Khubani Ka Meetha can be served with sweet cream, custard or almond/pistachio. The main ingredients of Khubani Ka Meetha are apricots, sugar, blanched almonds and Kewra. The special about this recipe is that, I used fresh Apricot instead of dried Apricot. Dessert is a perfect sweet for all occasions, so let's celebrate this day, with some sweets.

Today, is a 13th February, February the month of Love, and tomorrow is 14th February, Valentine's Day. However, prior to the Valentine's Day, we celebrated a Valentine's Week such as Rose day on 7th Feb, Propose day on 8th Feb, Chocolate day on 9th Feb, Teddy day on 10th Feb, Promise day on 11th Feb, Hug day on 12th Feb and Kiss day on 13th Feb. Lets celebrate this Valentine's Day with your loved ones and recall all those memories, which you were having with them. And please don't forget me and my recipes.

Course: Dessert side dish
Cuisine: Hyderabad

Ingredients: 

500 gm Apricots (fresh/dried)
200 gm sugar (optional)
sweet cream (optional)
custard (optional)
water as required
25-50 gm almonds, finely chopped
25 gm pistachios, finely chopped
2 tbsp Kewra/Rose water

Methods of cooking:

1. Wash and soak apricots in water for at least 6-8 hours or overnight.

2. Now, remove the apricots from the water, reserve this water for cooking and remove the stones from the apricots. And 1/4 of the apricots should be set aside.

3. Take a large vessel, cook the apricots in the same water in which it soaked, then bring to a boil. And cook for 20-25 minutes or until apricots becomes soft and pulpy. Check the consistency of its thickness. Add water, if needed.

4. Now, add the sugar and cook for 5-10 minutes or till it dissolved completely. Then, add the left over apricots and cook for 3-5 minutes. 

5. Turn off the flame, and transfer the
Khubani Ka Meetha into serving bowl and garnish with almond slices.

6. Yours Khubani Ka Meetha is ready to be served. Served hot or chilled with sweet cream or custard.

Arabic Tameez Bread With Mince مفروم تمييز

Arabic Tameez Bread has originated from Afghan and it is called as Nan-I-Afghani نان افغانی in Afghanistan. But Tameez Bread is popularly known and eaten in Saudi Arabia. The main ingredients of Tameez Bread are flour, yeast, sugar and water. Caraway seeds are often sprinkled on the top of the Tameez Bread. Arabic Tameez Bread is usually made in cylindrical clay oven or Tandoor. However, In this recipe, I cooked the Tameez Bread in the oven. The special about this recipe is that, In this recipe, Tameez Bread is cooked with mince and decorated with Brinjal, Tomato and Capsicum slices.

Ingredients:

For Mince:



2 medium size onions, thinly slice
2 tomatoes, finely chopped
600 gm beef/mutton mince
a bunch of green coriander, finely chopped
salt as per taste
1 tbsp red chili powder (optional)
1 tbsp cumin powder
1 tbsp black pepper powder
1 tbsp garam masala powder
8 garlic cloves, finely chopped
30-50 ml oil
1 tbsp cumin seed
4 green chilies, finely chopped


For dough:


75 ml of  lukewarm water
1 cup of yogurt
2 tsp of active dry yeast powder
1/2 tbsp salt (as per taste)
3 tbsp of oil + 1 tbsp for greasing
3 tsp of sugar
4 cups of all purpose flour
1 tsp baking soda double action
1 brinjal, thinly slice (for topping)
1 tomato, thinly slice (for topping)
1 capsicum, thinly slice (for topping)


Methods for cooking:

1. Take an empty bowl, then add flour, salt, baking powder, yogurt and olive oil.

2. Take an another bowl, dissolve sugar and yeast in lukewarm water. Let it settle for 10 minutes.

3. Now mix this mixture and knead it for 5-10 minutes or till it becomes a soft dough. Cover it with cling drape and let it rise for 6-8 hrs.



4. Take an empty pot vessel, heat oil, add cumin, when splutter, add onion and saute till they turn golden brown, then add mince and cook for 5-10 minutes or till mince changes its color. Now add salt, black pepper powder, red chili powder, cumin powder, garam masala powder, garlic and tomato mix them well and cook for 8-10 minutes. Now add green chili and coriander leaves and cook for another 2 minutes, turn off the flame and set aside.

5. Slice brinjal, capsicum and tomato. Set aside.

6. Now your dough has risen, knead for a few minutes. Divide it into 6-8 small size ball or 4 medium size or 2 bigger size ball. As shown in the picture



7. With the help of the rolling pin, flatten each ball into Tameez bread size and spread mince over the top of the Tameez bread  and decorated with brinjal, capsicum and tomato. As shown in the picture.


8. Preheat the oven at 425 degree Celsius.


9. Grease, oil in the baking tray, place the
Tameez bread over it and cook for 5-10 minutes.


10. Remove the
Tameez bread from the baking tray to a cutting board and cut it into 6-8 slices. Yours Arabic Tameez Bread with Mince is ready, serve hot with ketchup. As shown in the picture.

French Bread Shrimp Sandwich....New style

According to my experience, French Bread Shrimp Sandwich is one the easiest, the healthiest and the delicious sandwich recipe. However, making any kind of sandwiches is always a pleasure for me. Sandwich can be eaten as a snack or as a main meal for lunch or dinner. The Sandwich can also be eaten at picnic as a packed lunch or dinner. The main ingredients are bread (white or brown), egg, cheese, meat, chicken, sauce, mayonnaise and ketchup. There are varieties of sandwich, which are popular among worldwide such as, Cheese Sandwich, Omelette Sandwich, Shawarma Sandwich, Salmon and Cream-Cheese Sandwich, Tuna Sandwich, Falafel Sandwich, Scrambled Egg Sandwich, Boil Egg Sandwich, Chicken Breast Sandwich, Meat Sandwich, Salad Mayonnaise Sandwich and apart from Savoury Sandwiches there are a variety of Sweet Sandwiches such as, Jelly and Peanut Butter Sandwich and Fruit and Jelly Sandwich etc., The Sandwich is mostly demanded by children, they love sandwiches and they often preferred sandwich as one of the their lunch boxes. In this recipe, I used french bread, fried Shrimp, french fries, hot sauce and lettuce leaves.You can also add cucumber, tomato, onion, mayonnaise and ketchup, but this is optional. So try this simple and yummy French Bread Shrimp Sandwich.

Ingredients:


500-600 gm Shrimp

4-5 French bread (whole)

a bunch of lettuce leaves
250 gm french fries, (McCain frozen)

2 eggs beaten

50 ml cold milk

2 cups of all purpose flour

salt as per taste


1 tbsp red chili powder
1 tbsp black pepper powder

1 tbsp garlic powder

1 tbsp onion powder

5 tbsp lemon juice

hot sandwich sauce
oil for frying


Directions for cooking:

1. Clean and wash Shrimp, then add lemon juice and set aside for 10 minutes. After 10 minutes, wash these Shrimps into running tap water. Set aside to dry.

2. Take a bowl, wash and chopped lettuce leaves and set aside. If you wish to add cucumber, tomato and onion you could chop them too. It's optional.

3. Take an another bowl, add flour, salt, black pepper powder, red chili powder, garlic powder and onion powder mix them well and set aside.


4. Take a bowl, add egg, milk and a pinch of salt, mix them well with the help of handy whisker.

5. Take a Whole French Bread and slit it vertically with the help of a knife. And set aside.

6. Now take a Shrimp one by one and dipped it into the beaten egg mixture first, then dust/coat it with the flour and set aside. Repeat this process for the rest of the Shrimps.

7. Take a large pan, heat oil, then place McCain frozen French fries into it and cook for 8-10 minutes on high flame, turning occasionally (Oil should be enough hot while frying French fries. Do not overcrowd the pan, a small batch of French fries should be fried at a time). When French Fries turning light golden, remove them from the oil, with the help of slotted spoon to a paper to absorb the excess oil.

8. On the same pan, place a small batch of Shrimp into the oil. And cook for 5-10 minutes on medium flame, turning occasionally (Oil should be enough hot while frying Shrimp. Do not overcrowd the pan, a small batch of Shrimp should be fried at a time). When Shrimp turning golden brown, remove them from the oil, with the help of slotted spoon to a paper to absorb the excess oil.


9. Now take a Whole French Bread, add hot sandwich sauce, lettuce leaves, french fries and some Shrimp pieces, fold them and cover it with sandwich paper/foil, as shown in the picture.

10. Yours delicious
French Bread Shrimp Sandwich is ready to serve. Serve hot with Ketchup.
