Khubani Ka Meetha...خوبانی کا میٹھا Hyderabadi dessert

Khubani Ka Meetha خوبانی کا میٹھا is an Indian sweet originating from HyderabadKhubani Ka Meetha is a very popular Hyderabadi dessert made from dried apricots, which can be eaten as a main cuisine at Hyderabadi weddings. Khubani Ka Meetha can be served with sweet cream, custard or almond/pistachio. The main ingredients of Khubani Ka Meetha are apricots, sugar, blanched almonds and Kewra. The special about this recipe is that, I used fresh Apricot instead of dried Apricot. Dessert is a perfect sweet for all occasions, so let's celebrate this day, with some sweets.

Today, is a 13th February, February the month of Love, and tomorrow is 14th February, Valentine's Day. However, prior to the Valentine's Day, we celebrated a Valentine's Week such as Rose day on 7th Feb, Propose day on 8th Feb, Chocolate day on 9th Feb, Teddy day on 10th Feb, Promise day on 11th Feb, Hug day on 12th Feb and Kiss day on 13th Feb. Lets celebrate this Valentine's Day with your loved ones and recall all those memories, which you were having with them. And please don't forget me and my recipes.

Ingredients: 

500 gm Apricots (fresh/dried)
200 gm sugar (optional)
sweet cream (optional)
custard (optional)
water as required
25-50 gm almonds, finely chopped
25 gm pistachios, finely chopped
2 tbsp Kewra/Rose water

Methods of cooking:

1. Wash and soak apricots in water for at least 6-8 hours or overnight.

2. Now, remove the apricots from the water, reserve this water for cooking and remove the stones from the apricots. And 1/4 of the apricots should be set aside.

3. Take a large vessel, cook the apricots in the same water in which it soaked, then bring to a boil. And cook for 20-25 minutes or until apricots becomes soft and pulpy. Check the consistency of its thickness. Add water, if needed.

4. Now, add the sugar and cook for 5-10 minutes or till it dissolved completely. Then, add the left over apricots and cook for 3-5 minutes. 

5. Turn off the flame, and transfer the
Khubani Ka Meetha into serving bowl and garnish with almond slices.

6. Yours Khubani Ka Meetha is ready to be served. Served hot or chilled with sweet cream or custard.
